1 (16 ounce) can pineapple, drained
1 cup milk
3 tablespoons vanilla extract
1 1/2 teaspoons orange zest
1 1/2 tablespoons lemon juice
1/2 teaspoon salt
1 1/2 teaspoons sugar
1 (16 ounce) package frozen mixed berries
1 (16 ounce) can coconut cream
1/2 cup margarine
1 teaspoon vanilla extract
1 tablespoon sweetened orange juice
1 teaspoon ketchup
3 tablespoons orange juice
1 cup white sugar
1 tablespoon honey
Preheat oven to 350 degrees F (175 degrees C).
In a medium saucepan, combine pineapple, milk, vanilla extract, orange zest, lemon juice, lemon zest and lemon juice. Mix gently over low heat, stirring as needed. Remove from heat. Stir in mixed berries, coconut cream, margarine, orange juice, ketchup, orange juice, sugar and honey. Mix thoroughly. Spread mixture evenly into a 9x9 inch pan.
Bake in preheated oven for 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool in pan on a wire rack.
