1 (17.5 ounce) can crushed pineapple, drained
2 lemons
3/4 cup salted water
3 cups white sugar
2 eggs (Optional)
Preheat oven to 425 degrees F (220 degrees C).
Combine pineapple, 2 lemons, 3/4 cup salted water, white sugar and eggs in an 8x8 inch baking dish.
Prepare Pineapple Juice and Cookies with eggs. Bake in the preheated oven 30 minutes, or until lightly browned.
To serve: Place one cookie layer on a cookie sheet, spread with juice layer, and press one lemon layer down to flat.
