2 tablespoons vegetable oil
1 cup chopped onion
salt and pepper to taste
1 (16 ounce) can whole peeled tomato, with liquid
1 (8 ounce) package cottage cheese
1/2 pound Italian sausage, cut into 1/2 inch pieces

Heat vegetable oil in a large skillet or wok over medium heat. Stir in onion, salt and pepper. Saute for about 35 minutes, or until onions are bright red with olive oil. Remove from heat, and stir in tomato and cheese. Stir in sausage and cook longer. Transfer to a medium bowl. Top with cheese mixture and serve.
