1 cup all-purpose flour
2 eggs
1 teaspoon salt
1 teaspoon white sugar
5 tablespoons light water
Preheat oven to 375 degrees F (190 degrees C).
In a large bowl sift together flour and sweet potatoes; set aside. In a small saucepan combine eggs, salt mix, white sugar and 5 tablespoons water. Bring to a boil and-glaze with egg mixture. Pour over the dry ingredients, stirring just until heated through. Let stand 10 minutes, then fold into the pears.
Prepare Hennessey: Heat egg white and 1 tablespoon water in a small saucepan until slightly warm. Return mixture to heat and saute 1 minute; remove from heat. When thickened, pour into a 1 quart mould, and set aside.
Display range: Place parchment paper in a shallow dish or shallow bowl. Roll out similar size to grape-stems into long thin strips, about 2 inches apart. Cut each strip lengthwise into 4 wider and larger strips. Place strips 1 inch apart onto prepared round parchment paper. Chill for about 30 minutes, then unroll and arrange strips on waxed paper. Chill again.
