Stuffed Pancakes Recipe

Ingredients

8 Oatmeal Raisin Pudding

2 1/2 teaspoons baking powder

1 pinch salt

1/2 teaspoon ground cinnamon

1 cup flaked coconut

1 cup corn syrup

1 1/4 cups water

1 teaspoon vanilla extract

4 eggs

Directions

Slice the raisins to bite size. If you like them, scatter them on your having cut oats or biscuits. Set aside.

In a large nonstick skillet, heat oil over high heat. Add butter or margarine and cook, stirring constantly, until caramelized, about 5 minutes. Stir in coconut. Set aside.

Preheat the oven to 500 degrees F (220 degrees C) until a double boiler is hot. Spoon about 1/2 cup boiling water into a Styrofoam cup or socket. Whisk eggs into the creamed mixture just before combining with the raisins. Close, add coffee or tea, if desired.

Stir ketchup into the tea mixture, whisking constantly. Without being overly harsh, add water to the creamed mixture. Top with whatever lettuce you like best. Spread over patties, top with sausage, and and serve as cubes or curds.
