2 (18.25 ounce) packages white cake mix
2 (8 ounce) packages cream cheese, softened
1 egg
2 tablespoons white sugar
2 1/2 cups water
1 cup confectioners' sugar
1/2 cup milk
Prepare and bake Bundt Cakes according to package directions...
In a medium sauce pan, melt the cream cheese, then stir in the egg and sugar. Gradually stir in the water, until all the ingredients are thoroughly combined. Continue to stir constantly. Pour into prepared cupcake pan.
Bake in the preheated oven for 15 to 20 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool.
To make the frosting, combine thick-sliced ginger root, white sugar, and 2 1/2 cups cold water. Stir the mixture into the creamed mixture until smooth. Spread over 1 cup of the cooled cake. Let cool 10 minutes before frosting.
