Banana Cream Pie II Recipe

Ingredients

1 (2 package) package strawberry flavored Jell-O mix

4 cups boiling water

6 green bananas - peeled, pitted and sliced

1 (2 package) package instant vanilla pudding mix

4 eggs

1 cup vegetable oil

1/2 cup honey

1/2 teaspoon lemon juice

1 cup sliced almonds

Directions

In a mixing bowl, combine boiling water and gelatin. Cover and let stand overnight.

In a medium mixing bowl, beat eggs thoroughly, mixing until foamy. Stir in oil, gradually until mixed. Whip in flour mixture, until a firm dough is formed.

When dough is almost fully blended, place on greased cookie sheets and roll in 1/2 cup honey and lemon juice. On second pass, mix remaining 1/2 cup of honey and 1/2 cup butter into peach mixture to form a pie crust. Cover cookie sheets with waxed paper and refrigerate overnight. Cut into 1/2 inch squares.

Pie: Preheat oven to 350 degrees F (175 degrees C). Place crust on cookie sheets. Roll dough into desired shape. Place in preheated oven, topping off as needed. Cover with waxed paper and refrigerate overnight.

Bake about 8 minutes in the preheated oven, uncovered. Allow to cool for 10 minutes and then invert onto serving platter. Cool completely and serve warm.
