2 1/2 cups white sugar
3 eggs
2 1/2 cups butter, softened
1 cup brown sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
2 teaspoons baking soda
1 1/2 teaspoons vegetable oil
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets. In a bowl, cream together 2 1/2 cup white sugar and 3 eggs. Mix brown sugar with 1 teaspoon vanilla. Combine flour, baking powder and baking soda, and work with hands by rolling them into a ball.
Pour batter into prepared cookie sheets. Place onto the cookie sheets. Spread 1 teaspoon of butter over each cookie.
Bake for 8 to 10 minutes in the preheated oven. Remove from baking sheet to cool completely. Roll each cookie once more, and place on the cooling sheet. Cookies should be slightly puffy and brown during baking. Allow cookies to cool completely on baking sheet before transferring to an ungreased cookie sheet.
