COCOA STEW Recipe

Ingredients

1/2 cup shortening

2 tablespoons brown sugar

1/2 cup margarine

1 (20 ounce) can evaporated milk

3 tablespoons white sugar

2 cups corn syrup

1 tablespoon orange juice

1 pint heavy cream (such as chocolate or vanilla flavored)

Directions

Heat shortening and brown sugar in large skillet over medium heat. Heat 1 cup margarine and evaporated milk in microwave for 2 minutes, or until the margarine is melted. Add sugar by whisking until smooth. Stir corn syrup and orange juice to mixture, then pour over skillet. Cook, stirring constantly, about 4 minutes. Pour over skillet and cook 5 minutes more. Serve warm.

I love when a recipe calls for "kitchen sink items". I like how it spreads the coconut milk and honey like butter. I added a teaspoon each of fresh basil and oregano. I found that I could easily up the rum to 1/2 cup and leave out the sweetness. My guests raved about it and we will make this again!
