Vanilla Cake V Recipe

Ingredients

2 eggs

1 cup white sugar

2 teaspoons vanilla extract

1 cup vegetable oil

1 (3 ounce) package cream cheese

1 3/4 cups milk

1 cup water

1 teaspoon vanilla extract

1 cup vegetable oil

1 (13 ounce) can cherry pie filling

1/2 cup chocolate syrup

1 cup chopped walnuts

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (9 inch) pans.

In a large bowl, combine eggs, sugar, vanilla, oil, cream cheese and milk. Mix thoroughly. Pour mixture into prepared pans.

Bake in preheated oven for 60 minutes, or until toothpick inserted in center comes out clean. Allow to cool slightly.

In a small bowl, blend pie filling, orange slices, cherry pie filling and chocolate syrup.

In a large glass or metal bowl, beat cream cheese until fluffy. Stir in cherry pie filling, chocolate syrup and chopped walnuts. Pour over cake, covering completely.

I made this cake for a church function and got rave reviews. I left my butter knife at the Christmas party so I could make this recipe ahead of time and bake it earlier. I mixed my frosting and it came out nice. The icing is a perfect light cake - light enough to eat in on holiday morning!

This was easy enough to make ahead of time (no eggs were used). I made the icing with just 2 eggs, too. I also used 1 cup of conf. Because I wanted something with flavor and texture, I did not use just 1 tsp. of vanilla and used the icing to make the filling. ... the result was very tasty indeed, and the cake layers were easy to remove once the icing was on. I sealed the cake with a layer of icing, then the filling with a layer of icing, then the cake, then the remaining cake, and finally the icing. I would have liked to have seen the full recipe, but it was way too messy to eat in one sitting, I'm sure. I will make it over and over. It was a very nice treat, and a healthy alternative to white chocolate frosting.
