3/4 cup butter
1/2 cup white sugar
2 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon vanilla extract
1 cup buttermilk
1 teaspoon cocoa powder
1 teaspoon lemon zest
1 cup confectioners' sugar for dusting
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, cream together the butter, sugar, flour, baking powder, baking soda, salt, vanilla and buttermilk. Beat in the cocoa, lemon zest and cocoa mixture. Mix in flour mixture, cocoa and lemon zest. Drop by rounded spoonfuls onto the prepared cookie sheets.
Bake for 12 to 14 minutes in the preheated oven, or until a toothpick inserted into the center of the cake comes out clean. Remove from baking sheets to cool on wire racks. Dust with confectioners' sugar before frosting.
