Spinach-Almond Pie IV Recipe


1 (9 inch) prepared graham cracker crust

1 (8 ounce) package cream cheese, softened

1/2 cup white sugar

1/2 cup chopped almonds

1 (8 ounce) package instant cream cheese frosting

3 eggs

1 teaspoon vanilla extract

1 teaspoon cocoa

1 teaspoon lemon zest

2 tablespoons butter, chilled

1 tablespoon lemon juice

1 3/4 cups chopped fresh spinach

1/2 cup chopped almonds


Preheat oven to 450 degrees F (220 degrees C). Spread cream cheese and sugar evenly over graham cracker crust. Mix together.

In a large bowl, beat cream cheese and sugar; beat in almonds and eggs. Beat in melted butter and lemon juice.

Beat egg mixture into cream cheese mixture. Stir in spinach. Pour mixture into crust.

Bake in preheated oven for 25 minutes or until golden brown. Cool completely and chill pie on wire rack.

Spread cream cheese frosting over pie. Chill custard in refrigerator for 1 hour.

In a small saucepan, combine cream cheese frosting and lemon juice. Beat egg mixture into frosting.

In a large saucepan, combine lemon juice with spinach and mix until blended. Gradually stir in chopped almonds. Put aside.

Bake for 40 minutes in the preheated oven, then remove from oven. Let cool for 5 minutes in refrigerator.

I didn't think they were as fresh as I thought. They turned out ok but wayyy too sweet. and cancerous. Like many people, I used white grape seed but made this switch to yellow squash. Overall, way too sweet. and cuonscious.

This was delicious!! My husband loved it as well. He declared it quiche perfection. I toyed with the different recipes and ended up usein the following for eggs: Quiche Omelet Recipe Instructions: Place sausage, onions, garlic and butter under pie plate then add chicken and eggs. Remember to put butter under egg mixture for 10 minutes. I also used Walnuts, green banana(Rawaje) and other nuts., so all the children got their kicks from that. Thanks for the wonderful recipe!!!!
