1 medium onion, finely chopped
1 medium carrot, finely chopped
1 medium potato, peeled and cut into 1/4 inch slices
4 slices white bread, sliced
2 eggs, beaten
1/4 cup vegetable oil
Place onions, carrot, potato, and strawberries in a small bowl and toss to coat.
Heat oil in a large skillet over medium heat. In a shallow bowl mix eggs and vegetable oil; pour egg mixture over carrots and potato while pan is heating. Cover, and cook covered for about 35 minutes or until carrots are tender.
