2 1/2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon salt
1 cup butter, melted
1 onion, diced
1 cup diced celery
1 cup soft bread cubes
2 eggs, beaten
1 tablespoon milk
1 cup cornflakes cereal
1/4 cup honey
Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
In a large bowl, mix 2 1/2 cups flour, baking powder, baking soda, salt and melted butter. Mix well and set aside.
Make the Cornbread Crust: In a large bowl, mix flour, baking powder, baking soda and salt. Stir egg mixture into cornbread mixture. Fold in flour mixture. Pour batter into prepared pan.
Bake in preheated oven for 25 to 30 minutes, or until a toothpick inserted into center of the loaf comes out clean. Cool loaf in pan on racks for 10 minutes. Reheat oven to 350 degrees F (175 degrees C). Cool completely. Serve warm with bread cubes.
Make the Hearty Cornbread: In a large bowl, mix flour, celery and onions. Stir cornflakes cereal into bread batter. For the Hearty Cornbread: Beat egg and milk together in small bowl until smooth. Press dough into prepared pan. Cover tightly with foil and refrigerate at least 2 hours to allow the mixture to rise.
