Old Time Cookies Recipe

Ingredients

1 1/2 cups apple - peeled, cored and sliced

1 cup applesauce

2 teaspoons lemon juice

3 tablespoons honey

1 teaspoon salt

1 teaspoon ground cinnamon

5 teaspoons ground nutmeg

1 teaspoon baking soda

1/4 teaspoon ground cloves

3 cups brown sugar

1 teaspoon vanilla extract

Directions

In a large glass or metal bowl, mix applesauce, lemon juice, honey, salt, cinnamon and nutmeg. Tip: Shake vigorously to mix. Place brown sugar and vanilla into an electric blender or food processor. Blend until smooth. Spread into the bottom of a glass or metal mixing bowl. Chill overnight.

When ready to use, mix brown sugar and lemon extract in a 1 cup canning jar.

Roll the dough into 1 inch balls. Place 1/2 inch from the edge of the rectangle. Roll balls onto parchment-lined baking sheets.

Bake at 375 degrees F (190 degrees C) for 10 to 12 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

I made these for a party, took a bite, went into sugar shock. Thankfully, my chocolate cookie-making skills were not impaired. I used a cookie dough scoop and dough hook, and it worked fine. I made a dozen cookies, and they were delicious. I should have got to work on the recipe, because there is SOO much cookie-making overkill. I actually ended up baking the cookies for half the party, and it ended up to my chagrin of 12 cookies. Dammit. I had hoped to make 12 cookies, not 24. I was very pleasantly surprised that there were only 12 left over. I would make this again, and pass along to my Mom, Dad, and maybe a bit of Lindsey's leftover from last night's meal. Oh well. :o)
