Ripe Radicchio with Basil Sauce Recipe

Ingredients

1 quart olive oil for frying

1 large onion, chopped

1 medium head garlic, peeled and chopped

1/2 teaspoon salt

1/2 cup Italian seasoning

1 teaspoon crushed red pepper flakes

1 ball fresh radicchio

3 tomatoes, diced

1 (16 ounce) can chopped fresh basil

2 tablespoons chopped fresh parsley

2 tablespoons minced fresh oregano

1 (16 ounce) can tomato paste

2 tablespoons dried basil

1 tablespoon garlic powder

1 tablespoon crushed red pepper flakes

1 tablespoon dried basil

1/2 cup crushed red pepper flakes

Directions

Heat oil in a large skillet over medium heat. Fry onions in olive oil until golden and crisp. Remove from pan and set aside.

Fry garlic in olive oil until golden. When garlic is golden, add salt, Italian seasoning, crushed red pepper flakes, radicchio, tomatoes, basil, parsley, oregano, tomato paste, basil, garlic powder, crushed red pepper flakes, basil and garlic powder. Fry 10 minutes more, stirring often. Pour over oil frying-pan and serve hot over warm charcoal.
