1/4 cup dry white wine
4 cups water
1 medium onion, diced
1 medium green bell pepper, diced
1 medium carrot, diced
1 medium yellow squash, diced
1 medium sweet pepper, diced
1 cup crushed cornflakes cereal
1/4 cup chopped fresh parsley
2 cups Italian-style pasta
1 cup shredded mozzarella cheese
1/4 cup chopped green onions
2 tablespoons dried oregano
1/2 teaspoon salt
6 cloves garlic, minced
In a small saucepan, combine the wine, water, onion, and green bell pepper. Bring to a boil. Reduce heat to medium and simmer for 15 minutes. Stir in carrots, squash, sweet pepper, cornflakes cereal, parsley, pasta, cheese, green onion, oregano, salt, garlic, and mushrooms. Cook uncovered for 30 minutes. Drain liquid. Stir a foot or so before serving.
