12 Honey-Banana Pecan Rounds (8 inch squares)
1 banana, sliced
4 eggs
1/2 cup brown sugar
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground nutmeg
1 teaspoon vanilla extract
1 1/2 teaspoons lemon zest
2 tablespoons lemon juice
2 tablespoons milk
1 1/2 cups chopped pecans
1/2 cup butter, softened
1/2 cup brown sugar
1 teaspoon lemon zest
Preheat oven to 375 degrees F (190 degrees C). Grease and flour a 9-inch pie pan.
In a large bowl, beat eggs and 1/2 cup brown sugar until frothy. Stir in lemon juice, lemon juice and lemon zest. Pour mixture into pastry-lined pan.
Bake in preheated oven for 40 minutes, until filling is bubbly and bottoms of pies are golden. Cool, and store refrigerated.
