Stuffed Sweet Potatoes Recipe

Ingredients

8 sweet potatoes

1/2 cup butter, melted

1 teaspoon white sugar

1/2 teaspoon vanilla extract

2 eggs

2 1/2 cups milk

1 cup plain yogurt

Directions

Preheat oven to 350 degrees F (175 degrees C).

Bring a large pot of salted water to a boil. Add sweet potatoes, and cook for about 8 to 10 minutes or until tender. Drain potatoes, and place in a large resealable plastic bag. Watch Now

In a medium bowl, beat margarine, 1 teaspoon sugar, and vanilla in a large bowl until fluffy.

In a small bowl, beat milk in small bowl until smooth.

In a large glass or metal mixing bowl, beat eggs, milk, yogurt, butter, sugar, margarine mixture until blended.

Place bag into a large resealable plastic bag with a twist neck, and seal bag tightly.

Spread a layer of potato mixture evenly on parchment paper.

Bake in preheated oven for 25 minutes, until golden.

I gave them 4 stars because they were pretty good but I would double the raspberries and oats because I have both. I also added garlic powder and onion powder because I have both. I baked them in mini pie plates and they were prettyoo good. But I would double the cream cheese and use butter instead of oil. They were messy and took a lot of butter. But they were good and I will make them again
