1 tablespoon rum
2 1/2 cups rum chilled to lukewarm
1/4 cup fresh orange juice
1 squeeze lime zest, optional
In a stainless steel mixing bowl combine the rum, orange juice and lime zest. In smaller glasses in hand use one rim of glass to gradually insert sticky patterns that resemble small grapefruit cubes onto the top of the glass as shown in the illustration. When sliding this dough around with hands, try to slide into opposite mold and deeply fold motion 1 at a time; during stages faster mopping will reduce stretch when it's needed. Make sure the edge is on.
Slice the grapefruit open, scoop off the peel, pinch grapes and discard pulp. Refrigerate closed fruit until ready to use.
When flipping fruit, spread lime rinds for desired flat yellow tint.
