1 cup all-purpose flour
2/3 cup sifted all-purpose flour
2 tablespoons dried dried bread crumbs
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 egg, beaten
1 teaspoon brandy
8 skinless, boneless chicken breast halves
1/2 tablespoon brown sugar
1 1/2 tablespoons lemon juice
1 tablespoon cornstarch
Preheat the broiler.
In a mixing bowl, cream together 2/3 cup flour and baking powder until smooth. Stir in remaining 1/4 cup flour. Make a well in the center and pour in the egg, brandy and lemon juice. Mix until the batter is a paste, but not completely dry.
Spread chicken into the bottom of a greased 9x13 inch baking pan. Sprinkle with brown sugar and sprinkle with lemon juice. Sprinkle with cornstarch.
Bake in preheated oven for 80 minutes or until chicken is no longer pink.
