Chocolate Mincemeat Cake Recipe

Ingredients

1 (18.25 ounce) package orange flavored Jell-O Mix

3 (3 ounce) packages instant vanilla pudding mix

1 (.25 ounce) package instant chocolate pudding mix

2 eggs

1 cup boiling water

1 1/2 cups milk

1 teaspoon vanilla extract

1 cup chopped pecans

1 cup chopped pecans

1 teaspoon baking powder

100 drops red food color

1 (10 ounce) package instant vanilla pudding mix

1 1/4 cups milk

1/2 teaspoon vanilla extract

1 cup chopped pecans

1 cup chopped pecans

Directions

In a small bowl, mix gelatin and vanilla. Add 1 cup boiling water, stirring well. Allow mixture to cool.

In a large bowl, combine gelatin and brown sugar. Beat with electric mixer in large bowl until smooth and pour into prepared pan.

In a small bowl, stir together eggs, boiling water, milk, vanilla and chopped pecans. Mix into gelatin mixture, stirring gently until mixture is moist.

Pour into prepared pan. Chill overnight.

To serve, cool pie by placing on rack in large serving bowl. Place sliced pecans on top of pie.

Remove neck of pie from freezer. Place pie on rack in large serving bowl. Fill pie with gelatin mixture. Freeze until firm.

Pour pie filling into pie. Chill in refrigerator. Cover and refrigerate until firm. Save remaining frosting.
