Ingredients

2 cups frozen mixed vegetables, thawed

3 (6 ounce) cans tomato paste

7 cups water

1 (14 ounce) can frozen mixed vegetables

2 stalks celery, diced

1 cup chopped celery

2 tablespoons citrus zest

1/2 teaspoon dried oregano

Directions

In a large zip pouch combine water, mixed vegetables, tomato paste, mixed vegetables, celery, celery, citrus, oregano and lemon zest. Shake vigorously until everything is thoroughly combined.

Place mixture into a large pot over high heat; bring to a boil. Reduce heat, cover and simmer for about 5 minutes or until vegetables are tender. Serve at room temperature.
