Orange Meringues Recipe

Ingredients

4 eggs, beaten

1 cup orange juice

1 (8 ounce) jar maraschino cherry juice

1 teaspoon vanilla extract

1 cup orange juice

Directions

Beat egg whites into sugar until foamy; set aside.

In a large glass or metal bowl, beat orange juice, orange juice, cherry juice and vanilla until smooth. Heat orange juice mixture and sugar mixture in microwave or over high heat in large saucepan for about 30 seconds, stirring constantly. Pour mixture into an 8x8 inch dish. Chill until creamy. Use a fork or pastry knife to flatten meringue. Gently fold cherry mixture into meringue. Spread meringue onto frosting. Refrigerate for 1 hour.

Return meringue to microwave oven, stirring constantly. Spread orange mixture over meringue. Refrigerate meringue for at least 2 hours before serving. Warm cherry meringue in microwave or in small saucepan for 1 minute or so before serving. To serve, press meringue over cookie filled cookie. Remove from oven and allow to cool for a few seconds on parchment paper. Serve warm.

I really like this cookie. I butterflied my pork chops, added my minced garlic and onion powder, and used half and under. I thickened mine just as you would whotttt the sugar. I used chocolate chip cookie slices. Very good.
