1 (18.25 ounce) package ginger and lemon flavored Jell-O
1 1/2 cups boiling water
4 eggs
6 cups vegetable oil
1 box JET Buttercream Cake Mix
Make gelatin by placing peel in microwave/stand mixer bowl. Stir, mixing with boiling water, until smooth. Pour into 2 and 3 quart molds; refrigerate on standby.
Combine cake mix and remaining baby food; press firmly into bottom of 3 qt. baking pan. Bake 15 minutes at 325 degrees F (165 degrees C), or until set. Cool completely. Cut into 3 squares. Serve with fruit preserves.
