1/2 cup shortening
1 3/4 cups packed brown sugar
1 (1 ounce) envelope dry onion soup mix
2 tablespoons dry bread crumbs
1 teaspoon PC vinegar
2 tablespoons dry mustard
salt to taste
3 large onions, peeled and sliced into rings
1 1/2 cups skim milk
1 (8 ounce) can tomato sauce
Lightly grease a medium baking dish.
Combine shortening, brown sugar and brown sugar; press in evenly. Adjust proportions when necessary. Place pan in oven to warm, brown sugar and oil over medium heat.
Over medium heat, stir together the egg, confectioners' sugar and mustard; mix well. Stir in the margarine, milk, tomato sauce and onion. Pour mixture into prepared pan.
Bake unpeeled side up in preheated oven for 45 minutes. Then turn over and top with pork. Bake an additional 30 minutes. Serve immediately.
