Perfect Corn Muffins according to Jack! Recipe

Ingredients

1/2 cup butter

3 cups white sugar

1/2 cup brown sugar

3 eggs

1 teaspoon vanilla extract

1 cup corn syrup

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1 cup chopped pecans

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners.

In a large bowl, cream together the butter, brown sugar, eggs, vanilla and corn syrup until smooth. Beat in the corn syrup and flour. Stir in the flour mixture. Fold in the pecans. Pour batter into prepared muffin cups.

Bake in preheated oven for 20 minutes, or until a toothpick inserted in center of each muffin comes out clean.
