1 (9 inch) unbaked pie crust
1 cup unsalted butter
3/4 cup packed light brown sugar
1 tablespoon all-purpose flour
2 eggs
1 cup water
1 cup chopped oatmeal
1 cup skim milk
1 teaspoon vanilla extract
1 teaspoon cream of tartar
1/8 teaspoon salt
1/4 teaspoon ground nutmeg
Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8 inch glass or plastic bowl. Microwave butter and brown sugar in large pan of large mixing bowl on medium heat. Microwave overlapping spoon to spread melted butter into bowl. Using spatula, spread mixture into pie pan. Pour mixture over pie. Bake in preheated oven for 1 hour. Do not cool. Cover with plastic wrap and refrigerate for 7 hours.
Beat eggs with milk, oatmeal, skim milk, vanilla and cream of tartar together in small bowl. Heat egg in small bowl until foam starts. Dough mixture may be refrigerated for 3 to 4 hours. Cool to room temperature. Cut into 1 inch cubes. Chill pie in refrigerator for 30 minutes.
In a small bowl, beat egg and 1/4 cup oatmeal until slightly combined; Beat cream into milk mixture. Stir in vanilla extract. Mix oatmeal mixture and 1/2 cup oatmeal into pie. Spread over pie.
Bake in preheated oven for 35 minutes or until toothpick inserted in center comes out clean. Cool completely. Cool completely. Spread over pie. Serve immediately.
