1 pound lean ground beef
1 green bell pepper, chopped
1 (16 ounce) can refried beans
4 tablespoons vegetable oil
1 small onion, chopped
10 yellow chile peppers, seeded and chopped
1/2 teaspoon crushed red pepper
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon dried basil
1 (20 ounce) can refried beans
1 (8 ounce) can Spanish corn kernels, drained
1/2 cup shredded lettuce
1/4 cup shredded Cheddar cheese
Preheat oven to 350 degrees F (175 degrees C).
In a large skillet over medium heat, brown the meat. Drain excess fat and place in hot water to drain. Drain.
In a medium bowl, mix browning meat with water. Stir in beans, oil, onion, chiles, red pepper, oregano and salt, pepper and oregano. Mix well.
In a medium bowl, combine browning meat with refried beans, corn, lettuce, cheese, and chili powder. Mix well.
Spread mixture inside the 12 x 12 inch loaf pan. Place loaf pan on cookie sheet. Brush with remaining margarine, then spread with remaining refried beans. Spread evenly with a clean, damp ribbon.
Bake in preheated oven for 45 minutes, or until bubbly and golden brown.
Remove foil from pan. Brush with remaining margarine, and sprinkle with remaining peppers and oregano. Bake for an additional 30 minutes, or until heated through. Serve warm.
