1 tablespoon cornstarch
1 tablespoon vegetable oil
1 onion, chopped
1 (4 ounce) can chicken broth
1/2 cup water
1 cup half-and-half cream
2 tablespoons lemon zest
2 tablespoons lemon juice
2 tablespoons lemon zest
1 teaspoon distilled white vinegar
3 tablespoons chicken bouillon granules
1 (10 ounce) can lemon-lime flavored carbonated beverage
Heat oil in a medium skillet over medium heat. Saute onion and chicken in oil until browned. Reduce heat to medium-low. Fry in skillet until chicken is crisp-tender.
Add water and chicken broth, stirring to cover.
Add lemon-lime soda and bouillon; mix well. Stir in vinegar and rice. Pour mixture over chicken and rice. Cover and chill.
