4 medium potatoes, peeled and cubed
4 medium onions, cut into 1/2 inch slices
1 medium head garlic, peeled and chopped
1/4 cup vegetable oil
1 (15 ounce) can zucchini, undrained
2 black olives, cut into 8 slices
1/2 cup buttermilk
salt and pepper to taste
3 tablespoons butter
1 cup vinegar
1/2 cup olive oil
1/4 cup grated Parmesan cheese
Preheat oven to 400 degrees F (200 degrees C).
Remove potatoes from water and place on wax paper. Cover paper and refrigerate overnight.
Preheat oven broiler.
Remove potatoes from water and place on baking sheet. Boil 5 minutes, turning once. Remove from heat and set aside.
In a large bowl, mix the onion, garlic, oil, zucchini, onion, garlic, olive oil, vinegar, olive oil, Parmesan cheese, parsley, salt and pepper. Serve on the top of baked potatoes.
