4 pounds ground dry beef
1 cup dry white wine
1/2 cup all-purpose flour
2 egg yolks
2 teaspoons cayenne pepper
1 tablespoon salt
1 1/2 teaspoons paprika
1/2 tablespoon baking soda
1/2 cup butter
1/2 cup dark cornmeal
Preheat oven to 375 degrees F (190 degrees C). Cover a piece of foil-lined baking sheet with aluminum foil.
In a medium bowl, combine the beef, wine, flour, egg yolks, cayenne pepper, salt and paprika. Stir together and set aside for 20 minutes.
In a large skillet over medium heat, but without oils, saute the butter and cornmeal in a large pan until very tender. Stir in the dill and garlic until thoroughly combined. Heat until well blended, then add mustard. Pour evenly over beef mix. Garnish with paprika and baking soda.
Bake about 20 minutes or until center is firm.
