Tapas de Pehu Pita Recipe

Ingredients

1 tablespoon margarine

1/2 teaspoon paprika

1 green bell pepper, seeded and chopped

4 cloves garlic, finely chopped

salt and pepper to taste

6 (10 ounce) pita breads

Directions

Preheat oven to 350 degrees F (175 degrees C).

Heat margarine and paprika in medium, heavy-duty saucepan over low heat. Stir in cumin seeds and salt. Cook, stirring, for 5 minutes. If paprika begins to brown, add salt and pepper to taste; heat followed by paprika or mayonnaise. Remove from heat.

In a large bowl, mix the green pepper, garlic, garlic powder, salt and pepper. Spoon mixture into prepared pita pockets.

Bake 1 hour in the preheated oven, turning over hot pita each half a few times to ensure crisp pockets. Refrigerate while cool.

I used olive oil instead of vegetable or raw food', swapped roasted red peppers for red, added thyme, and a smidgen of garlic. Just added a whole bunch of fresh garlic cilantro hoping for a better version of old favorite soup. This is so delicious & I highly recommend it for any special occasion. I wish we had opened this back when I was growing up and had it on special gifts from friends and cooking associates.
