Spicy Scalloped Potatoes Recipe

Ingredients

2 tablespoons butter, divided

1 onion, sliced into rounds

1 medium onion, sliced into rounds

2 cups crushed potatoes

fresh bread crumbs

salad green, cut into strips

1 cup salsa

1 (8 ounce) jar salsa

2 ounces extra-sharp processed cheese food

1 small onion, diced

Directions

Melt butter in a large heavy skillet over medium heat. Stirring constantly, add onions and saute until translucent, about 5 minutes. Stirring frequently, cook to a simmer. Reduce heat, cover, and simmer until tender, about 20 minutes.

Stir potatoes into the skillet with water, then stir with the onion. Reduce heat to low, and stir. Continue stirring until all potatoes are coated with butter, about 45 minutes more. Drain well.

Stir the marinated green beans into the skillet with water. Continue stirring until potatoes are coated with butter, about 30 minutes more. Mix in salsa, fruit, cream cheese, onion, cheese, and egg until heated through (doughnut sized chunks may be obtained).
