1 cup butter, softened
3 eggs
1 cup milk
1/2 cup white sugar
1 small cinnamon stick
1 (4 ounce) can frozen orange juice concentrate (including juice packs)
4 teaspoons sugar
2 tablespoons milk
In a mixing bowl, combine butter, eggs, milk, sugar, cinnamon, and orange juice concentrate. Stir until smooth. Let cool.
Melt 1/2 teaspoon of sugar in a small saucepan over medium-low heat. Whisk in milk and cook until mixture thickens, about 2 to 4 minutes. Stir in potatoes, a wedge at a time, until onions are soft. Chill for 2 hours, stirring occasionally. Serve.
