2 tablespoons butter
1 cup all-purpose flour
6 ounces fresh spinach, rinsed and stem ends trimmed
1 (14 ounce) can sliced mushrooms
1 (15 ounce) can sliced mushrooms
1 cup shredded Cheddar cheese
1 small onion, minced
In a medium bowl, cream together butter, flour and 1 cup spinach. Mix spinach and mushroom with a pastry blender.
Once the mixture has come together, mix mushrooms and cheese. Spoon mixture into an 8x8 inch dish. Layer with spinach mixture. Layer with mushrooms and Cheddar cheese. Sprinkle with onion. Repeat with the remaining ingredients.
Bake in preheated oven for 30 minutes.
