Peach Pumpkin Pie VI Recipe

Ingredients

2 1/4 cups peaches, pitted and pitted

2 cups pumpkin puree

1 (1 ounce) cup frozen whipping cream, thawed

2 teaspoons vanilla extract

1 1/2 teaspoons black sugar

3 tablespoons butter

Directions

Preheat oven to 350 degrees F (175 degrees C). Place peaches on a baking sheet. In a large bowl, combine peaches, pumpkin and whipped cream. Stir in sugar to spread evenly. Pour mixture over peach slices in 10 baking dishes.

Bake in preheated oven 30 to 35 minutes. Cool thoroughly. Meanwhile, in a double boiler or stand mixer, combine pecans and cinnamon in 3 or 4 different stages waiting does before mixing. Stir pecans into whipped cream skin and stirring thoroughly. Transfer mixture to peach slices. Cool completely (recipe coming soon). Decorate with peach ice cream frostings, fruit preserves or cupcakes.
