Roasted Garlic Chicken Recipe

Ingredients

1/2 cup olive oil

4 cloves garlic, minced

2 large onions, cut into 1-inch pieces

1 tablespoon grated ginger

1 tablespoon dried oregano

1 teaspoon dried basil

1 tablespoon skin sweet pickle relish, crushed

1 red onion, chopped

1 1/2 pounds skinless, boneless chicken breast halves

1 tablespoon Italian-style seasoning

Directions

Heat olive oil in a medium saucepan over medium heat. Add garlic and onions; saute for about 15 minutes or until garlic liquid has gone.

In a small skillet over medium heat, cook ginger and oregano in 1-1/2 cup olive oil mixture until almost an inch of the ginger is melted. Mix in basil, then stir in chicken.

In a medium bowl, mix Italian-style seasoning with chicken. Pour mixture over chicken and sauce. Resist the temptation to scoop sauce onto plates. Place chicken on plates and continue cooking as you would chicken. Serve hot.
