3 cups rolled oats
1 cup butter, softened
1 1/2 cups cocoa
3 1/2 cups packed brown sugar
1 1/4 cups all-purpose flour
1 teaspoon vanilla extract
1 teaspoon instant chocolate pudding mix
1 cup semisweet chocolate chips
Preheat oven to 425 degrees F (220 degrees C). Grease cookie sheets.
In a large bowl, mix the oats, butter, brown sugar and brown sugar. Stir until well blended. Mix in the flour, cocoa, brown sugar and vanilla. Stir until just blended.
Pour cookie batter into prepared cookie sheet. Place aside.
Bake for 8 to 10 minutes in the preheated oven, or until a small toothpick inserted into the center of the cookie comes out clean. Cool for a moment on the baking sheet in the plastic wrap before removing to wire racks to cool completely.
