Stuffed Chickenonion Recipe

Ingredients

9 skinless, boneless chicken breast halves

1 cup water

4 skinless, boneless chicken breast halves

2 eggs

1 cup olive oil

1 teaspoon dried tarragon

1 teaspoon dried oregano

1 cup chopped onion

1 cup shredded mozzarella cheese

2 cloves garlic, minced

1 tablespoon dry mustard

salt and pepper to taste

Directions

Preheat oven to 400 degrees F (200 degrees C).

Place chicken breasts in a medium saucepan with water to cover and boil 3 to 5 minutes. Drain and stir chicken through baking dish.

Place chicken breasts in a 9x13 inch baking dish and sprinkle with egg, olive oil, tarragon, oregano, onion and cheese.

Bake uncovered for 20 to 25 minutes. Remove chicken from baking dish. Pour oil mixture into baking dish with the pasta.

Bake uncovered for 40 to 45 minutes, stirring chicken occasionally. Remove chicken from oven and place on a platter. Sprinkle with garlic, poppy seeds, mozzarella cheese, garlic salt, salt and pepper.

I tried this out for a party and they loved it. It is indeed pretty much delicious, but I would line the bowl with cream cheese instead of shortening. I would add a dash of nutritional yeast (I use dried this and applied it to the inside of the bowl) and probiotic flake into the batter.
