Stuffed Mashed Potatoes Recipe

Ingredients

1 (10 ounce) bag MASH or instant French fried potatoes

1/2 cup white sugar

1/2 cup vegetable oil

1/2 cup vinegar

1/2 cup grated Parmesan cheese

Directions

Cut the potatoes in half, leaving one side green.

Carefully slice the tops off; peel and cut each potato in half.

Place the green side down in a medium bowl, and dunk in the sugar and oil. Pour the vinegar over the potatoes. Cover and refrigerate overnight.

Remove potatoes from the refrigerator, and remove the green-side hull. Mix mustard and vinegar together and cover, and refrigerate for at least one hour to allow the flavors to blend.

Preheat oven to 450 degrees F (230 degrees C).

Stir potatoes half way through. Fry potatoes in the preheated oven 10 minutes per side, or until golden brown. Drain on paper towels, and serve hot.

We made this for a dinner, and it was completely devoured by children. It was so easy to prepare and it delivered on every occasion. I only used half the potatoes and still used the butter, and it still tasted delicious. Just make sure the zucchini, squash or other vegetable you use has at least a 1/4 cup of flour (I used a whole wheat one) or it will not work at all.

This is a great recipe. Very easy. I have made it for parties and it gets lots of laughs. If you are looking for a low calorie alternative, such as a ketogenic diet, this is the one for you.
