3 potatoes, peeled and cubed
1 (6 ounce) package Canadian potato chip mix
1/4 cup grated Parmesan cheese
Place potatoes in a 9x13 inch baking dish. In a microwave-safe bowl, microwave potatoes until potatoes are tender. Stir in cheese. Chill in the refrigerator overnight.
Preheat oven to 375 degrees F (190 degrees C).
Bake in preheated oven for 12 to 15 minutes, or until potatoes are tender and cheese is melted.
