1 cup butter
1 cup packed brown sugar
2 eggs
1/2 teaspoon vanilla extract
3/4 teaspoon salt
1/2 cup buttermilk
1/2 cup flaked coconut
1/2 cup chopped pecans
1/2 cup chopped pecans (optional)
1/2 cup confectioners' sugar for decoration
Preheat oven to 400 degrees F (200 degrees C).
In a medium bowl, cream together the butter, brown sugar and eggs. Beat in the vanilla and salt. Add enough flour to make a well in the center and pour in the buttermilk and coconut.
Pour into the prepared pan. Drop remaining flour by heaping spoonfuls onto the top of the pan. Heel drop by rounded spoonfuls onto the top of the pan.
Bake for 8 to 10 minutes in the preheated oven, until a wooden toothpick inserted comes out clean. Cool for 5 minutes before removing from the pan.
To make the Filling: In a medium bowl, combine 1/2 cup chopped pecans (optional) and 1 cup confectioners' sugar. Beat until smooth.
