1 1/2 cups all-purpose flour
1 ½ teaspoons baking soda
1 tablespoon cornstarch
2 teaspoons baking powder
1 teaspoon salt
1 tablespoon coconut milk
1 tablespoon lemon juice
1 tablespoon apple cider vinegar
1 cup peanut oil
1/4 cup vegetable oil
1/2 cup water
1/2 cup chopped fresh pineapple
1/2 cup carrots
1/8 cup mayonnaise
1 tablespoon light brown sugar
1/4 cup water
1 tablespoon water
1 large carrot, chopped
Preheat a grill or broiler. Sprinkle 1 cup of the flour onto a watermelon.
Bake in preheated 400 degree F (200 degree C) for about 40 minutes on each side. Drain excess liquid from watermelon and crush with a potato masher to pulp; set aside.
Bake in preheated oven for about 7 minutes or until center of fruit is tender. Spoon a little lemon juice over watermelon center and gently remove from pan. Repeat with remaining flour and baking soda, cornstarch, baking powder, salt, coconut milk, lemon juice, and apple cider. Reduce heat to medium.
Transfer watermelon to a large pot. Bring water to a boil in a medium saucepan and cook for 10 minutes; remove from heat and stir in coconut milk.
Remove watermelon from pot and place into a medium bowl. What you are left with is a luscious green watermelon, flakier than fresh, and very delicious!
Dolt salt over the green watermelon and simmer gently for 10 minutes. Drain juice and pour into the pot. Cover and simmer for 10 minutes and stir until desired thickness.
