1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1 cup brown sugar
1 egg, beaten
1/2 teaspoon vanilla extract
1/3 cup milk
2 tablespoons butter
1/3 cup finely chopped almonds
Preheat the oven to 375 degrees F (190 degrees C). Bake the cookies in the preheated oven 7 minutes, till the tops are light brown. Remove from the oven and sprinkle with chopped almonds. Let cool on waxed paper.
Sift the flour, baking soda and brown sugar into a small bowl. Rub butter into the flour mixture; stir until smooth. Mixture will be elastic. Using a pastry knife, score the top of each cookie 1/2 to 2 inches thick. Transfer the cookie to a waxed paper lined plate and press down slightly.
Bake for 10 to 12 minutes in the preheated oven, or until lightly browned. Remove from the waxed paper and cool completely before cutting into squares. Carefully remove and remove parchment, then cut out cookies.
