1/2 cup packed brown sugar
1/2 cup white sugar
4 eggs
1 (8 ounce) container orange juice concentrate
1/4 cup lemon juice
3 tablespoons lemon zest
1 teaspoon lemon zest
1 tablespoon lemon juice
2 teaspoons lemon zest
2 cups milk
1 teaspoon margarine or margarine, melted
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, mix brown sugar, white sugar, eggs, orange juice concentrate, lemon juice, lemon zest and lemon zest. Mix until well blended. Pour egg mixture into the prepared pan.
Bake in preheated oven for 30 minutes, or until light brown. Cool 10 minutes, then remove from pan. Stir in lemon juice.
In a small bowl, mix lemon zest and lemon zest. Sprinkle lemon zest over fritters before adding lemon juice.
Transfer fritters to a serving bowl. Cover with a bath towel and store in refrigerator.
While fritters are chilling, dissolve margarine in cup of boiling water. Mix thoroughly.
The next morning, remove fritters from refrigerator. Place on flat surface of a large pan to cool completely. Serve with whipped cream or whipped cream and whipped cream.
