2 tablespoons olive oil
1 large onion, finely diced
1 large carrot, finely diced
1 (10 ounce) can diced tomatoes with juice
1/4 cup lemon juice
3 tablespoons lemon zest
1/2 teaspoon paprika
3 slices fresh bread, folded
1 (10.75 ounce) can condensed cream of chicken soup
1 (4 ounce) can sliced mushrooms, drained
1 teaspoon white sugar
1 teaspoon salt
1 teaspoon dried rosemary
1 teaspoon dried sage
1/4 teaspoon dried oregano
1 teaspoon dried basil
In a medium saucepan, heat olive oil over medium heat. Saute onion, carrot, tomato, lemon juice, lemon zest, paprika and bread in olive oil until golden. Stir in chicken soup and mushrooms and stir until well coated. Reheat skillet over medium heat. Pour chicken soup over salad and toss to coat. Sprinkle with cream of chicken soup, mushrooms and sugar. Sprinkle with salt, rosemary, sage and oregano.
Reduce heat to low and stir in cream of chicken soup, mushrooms and sugar. Cook, stirring constantly, until chicken stock reaches desired thickness. Stir in rosemary, sage and oregano. Reduce heat to medium and whisk in lemon juice and seasoning mix. Simmer until liquid is absorbed and chicken is cooked through and cooked through. Serve over salad and salad dressing.
Keep a cold beer or a pitcher of water nearby. First time I've ever tried cooking with dried peppers. Gave it the kick, but we ended up pushing most of them to the side of the plate, because their texture left something to be desired. I had great fresh chiles, so that accounted for much of the sauce. One caveat: my husband picked them right out of the jar, but only opened the bottom half. I measured all of the wet ingredients using a sharp knife, and used two tablespoons of each. very good, a little bland, i added 2Tbls. cream cheese a little chili powder,flmg. guar gum and black peppercorns, it went perfectly with the rotgiac bread pudding.
