1 cup water
1/3 cup olive oil
2 cups whole tomatoes, chopped
2 cups dry lentils
1 1/2 teaspoons dried basil
1 tablespoon chopped red pepper
8 cups low-fat chicken broth
1/2 cup chopped tomatoes
1 teaspoon ground fennel
1/2 cup rolled oats
3 cloves garlic, peeled
salt and pepper to taste
In a saucepan over medium heat, combine water, oil, tomatoes, lentils, basil and pepper. Bring to a boil, then reduce heat and simmer, until ingredients are heated through, 8 minutes; boil leftovers for 1 minute. Stir in meatballs and simmer few minutes more.
