1 tablespoon olive oil
1 lb fresh sliced onions
1/2 teaspoon crushed red pepper flakes
2 tablespoons minced clams
2 tablespoons minced butter
1/4 cup chopped onion
1/2 teaspoon dry mustard
1 cup orange juice concentrate
2 tablespoons light brown sugar
1 (8 ounce) can sliced fresh mushrooms (optional)
1 teaspoon dried oregano
2 teaspoons onion salt
1 cup steak sauce
2 cups fresh mushrooms
1 (8 ounce) can whole black beans, drained (if you'd like them sliced)
1/3 cup sliced green olives
Put olive oil in a large saucepan. Heat in olive oil until it is thoroughly warm. Place the onions and chili flakes in oil. Stir frequently to keep them from sticking to the pan. Toss with bread crumbs and mustard. Sift together orange juice concentrate, brown sugar, mushrooms, oregano and onion salt. Pour mixture over the onion mixture.
Remove pan from heat and spread evenly the steak mixture over the bottom of the pan. Sprinkle with sliced mushrooms and olives. Dot with steak sauce. Turn and let sit 30 minutes.
Remove mushrooms from the pan and position under the pan. Place mushrooms on the bottom and up the sides of the pan. Top with meat mixture. Sprinkle with sliced mushrooms and olives.
Brown the steak sauce out and pour over the mushroom mixture. Cover and marinate in the refrigerator about 1 hour.
Remove lid from pan and mark with an 8 inch beaker with a piece of waxed paper to mark the line on the foil. Place foil on top of pan to prevent sticking. Grill 20 minutes in the preheated oven, or until transparent in the center.
