Peach Meringue Recipe

Ingredients

2 cups peaches, pitted and sliced

1/2 cup chopped pecans

1 teaspoon lemon zest

2 scoops vanilla marshmallow creme

1 cup creamy peanut butter

1 cup butter or margarine

1 cup packed light brown sugar

2 tablespoons lemon juice

1 (8 ounce) package cream cheese, softened

1 1/2 cups chopped pecans

1 teaspoon vanilla extract

Directions

Melt peaches and pecans in a saucepan. Dip peach mixture in melted pecans. Chill in refrigerator.

Stir marshmallow creme into peaches. Beat cream cheese in small bowl. Stir into marshmallow creme mixture, then gradually blend in peanut butter with remaining 1/2 cup of pecans. Chill in refrigerator.

Melt pecans in medium bowl.

In a medium bowl, cream together butter, brown sugar, lemon juice and lemon zest. Stir peanut butter to cream and spread mixture into a 2-1/2-inch circle. Chill in refrigerator. Cut into 1-inch squares.

I made this recipe on a whim, and it turned out fantastic. The only change I made was that I added a extra egg, 1 tsp. vanilla and 1 tsp. blue food colouring. In the recipe, orange peels are for Easter, so I included that in the egg mix. Thanks!

Peach Em Up! I'm serious, this is the BEST peaches I've ever tasted! Made these into bars, and had them with the boys dinner a few days ago. What a treat, and something I'll definitely make again. You could use a peach compote instead of this peach, and that'd be awesome!
